Your method - flicking them off a spoon - seems also like the one used for spaetzle. My mother also made rivel soup and put me in charge of crafting them - she made the very dry dough, then I washed my hands and put them in the bowl, rolled the dough into little balls that were left in the bowl until the broth was ready. Her broth was made from a browned butter roux - I&#39;m sure she called it something else as she got all her recipes from her Volga German mother and aunts.
