Haddock Fillets with Roasted Pine Nuts
and Parmesan Crust Topping

1-1 ½ lb’s Haddock
3 Tablespoons grated parmesan cheese
4 Tablespoons melted butter
5 Tablespoons Pine Nuts
1 teaspoon cracked pepper
Place pine nuts on a small oven safe plate or stone and toast in toaster oven or in regular oven for 2-3 minutes till just light brown; remove and let cool


Rinse fish in cold water and place in a 9 x 12 oil sprayed dish or heavy pan


Lightly salt the haddock fillets
Mix parmesan and melted butter together to form a smooth paste and spread over each fillet
Sprinkle cracked pepper on top of fillets and bake in a 400 degree oven for 12-13 minutes



While fish is baking; gently smash the pine nuts with a fork or chop with a knife into small pieces


Remove fillets from oven and turn on broiler; sprinkle the pine nuts over the top of each fillet and return fillets to broiler for only a minute till topping is brown and crusty.



Serve with a baked sweet potato and your favorite veggie.
