Homemade Pesto

Ingredients

  • 6 oz sundried tomatoes in oil
  • ¾ cup extra virgin olive oil
  • 1 teaspoon pepper
  • ¾ cup red wine vinegar
  • 1 cup fresh basil chopped
  • 1/4 cup pitted black olives chopped
  • 2-3 garlic cloves minced
  • ½ cup green onions
  • 1 teaspoon salt

Method

Place all ingredients in food processor and process till well blended.

Serve with toasted garlic bread, stir into cooked pasta or serve with fresh vegetables
